Green Goddess Soup

Directions

  1. Step 1

    Over low heat, combine onion, garlic, leek and celery with 1 cup stock. Add broccoli and kale and cook down.

  2. Step 2

    Add remaining chicken stock and cook over medium heat for 20-30minutes.

  3. Step 3

    Add corn, baby spinach and rocket and simmer for another 20-30minutes. Remove from heat and blend to desired consistency. Season to taste.
