Pancakes with yoghurt, honey and fruit

Recipes

Ingredients

  • 1 cup self-raising flour
  • 1/2 cup oat bran
  • 1 1/2 cups milk
  • 1 egg
  • 1 pinch salt
  • 200g natural or Greek yoghurt
  • 1 punnet strawberries or other fresh fruit, honey or pure maple syrup to drizzle

Method

1. To make the pancake mixture, combine the flour, oat bran, milk, egg and salt in a bowl and mix with an electric beater on high for 1–2 minutes until smooth.

2. Heat a non-stick pan over medium heat and pour in 1/4 cup of pancake mixture. Cook for 2 minutes or until lightly golden and flip over to cook the other side.

3. Remove from the pan and set aside. Repeat with the remaining mixture until all pancakes are cooked.

4. Top each pancake with a dollop or two of yoghurt, strawberries and a drizzle of honey.

Serve and enjoy!

Heart Tip: Research shows that insoluble fibre – particularly from cereal grains and vegetables – has the best effect on reducing the risk of cardiovascular and coronary heart disease.
