1. To make the pancake mixture, combine the flour, oat bran, milk, egg and salt in a bowl and mix with an electric beater on high for 1–2 minutes until smooth.
2. Heat a non-stick pan over medium heat and pour in 1/4 cup of pancake mixture. Cook for 2 minutes or until lightly golden and flip over to cook the other side.
3. Remove from the pan and set aside. Repeat with the remaining mixture until all pancakes are cooked.
4. Top each pancake with a dollop or two of yoghurt, strawberries and a drizzle of honey.
